FRESH COCONUT CAKE 
16 tbsp. butter
2 c. sugar
4 eggs
3 c. flour
2 tsp. baking powder
1 c. milk
1/2 tsp. each vanilla and lemon extract

Mix butter, sugar. Add eggs. Add flour and baking powder, alternate with milk, finish with dry ingredients. Pour into 3 greased and floured pans. Bake at 375 degrees for 30 to 35 minutes.

COCONUT ICING:

2 c. sugar
1 c. coconut liquid or 1/2 c. water
6 tbsp. butter
1 grated coconut or 3 (6 oz.) frozen coconut
3 egg whites
1 tsp. sugar
1 tsp. vanilla

Melt butter. Add sugar, liquid. Add coconut. Beat egg whites and sugar. Beat until stiff. Fold into coconut mixture. Cook 5 minutes. Spread on cake.
