FRESH COCONUT CAKE 
4 eggs, separated
1/2 c. butter
1 1/2 c. sugar (I use 2 c. sugar)
1 c. milk
3 c. self-rising flour
2 tsp. baking powder
1 tsp. vanilla

Beat egg whites until stiff and set aside. In another mixing bowl, add 4 egg yolks, 1/2 cup butter and sugar. Cream these ingredients together. Sift flour and add baking powder. To cream mixture add flour alternately with milk. Add vanilla flavor and egg whites. Mix well and pour into two 9 inch well-greased and floured cake pans. Bake at 300 degrees.

ICING:

2 boxes powdered sugar
1 c. Crisco lard (not oil)
2/3 c. water

Mix all together with mixer until fluffy. Spread over cake. Add coconut.
