FRESH COCONUT CAKE 
2 c. sugar
1 stick butter
1/2 c. Crisco
5 eggs
1 c. buttermilk
1 pkg. frozen coconut
2 c. sifted flour
1 tsp. baking soda

Cream sugar, butter, Crisco, and eggs together. Mix well. Add flour, soda, and buttermilk. Mix well and add frozen coconut. Pour into 3 greased and floured layer pans. Bake at 350 degrees for 30 minutes.

ICING:

8 oz. pkg. cream cheese
1 stick butter
1 box powdered sugar
1 tsp. vanilla
1 pkg. frozen coconut

Mix together and spread on cool cake. Put frozen coconut between layers and on top of cake.
