FRESH COCONUT CAKE 
5 eggs, beaten separately
2 c. sugar
3/4 c. Crisco

Cream sugar and crisco. Add egg yolks. 3 cups self-rising flour; add heaping teaspoon baking powder, 1 cup fresh milk and 1/2 teaspoon vanilla. Fold in egg whites. Bake at 350 degrees for 30-35 minutes in greased and floured 9 inch pans (3). After baking, spoon coconut milk on each layer.

ICING:

2 1/2 c. sugar
2 1/2 c. fresh milk
4 tbsp. flour

Mix flour and sugar. Add milk and cook over very low heat until mixture begins to thicken. Remove from heat and add 1 whole grated coconut. Cool until thick enough to spread.
