PUMPKIN ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin (solid pack)
3/4 c. flour
1 tsp. cinnamon
1 tsp. baking soda
3 oz. chopped pecans or walnuts

Mix first 6 ingredients together. Grease a jelly roll pan and cover with wax paper. Spread mixture on pan and sprinkle with nuts. Bake at 375 degrees for 10-15 minutes.

While pumpkin is baking sprinkle powdered sugar on dish towel. Put cake on towel. Remove wax paper. Roll towel and cake up together. Cool 20 minutes on rack seam side down.

FILLING:

8 oz. cream cheese
2 tbsp. mayonnaise
1 c. powdered sugar
1 tbsp. vanilla

Mix together. Unroll pumpkin roll and spread with filling. Reroll, seam side down. Wrap in foil. Freezes very well.
