GREEN NOODLES WITH THREE CHEESES 
Fine dry crumbs
1 tbsp. salt
3 qt. boiling water
5 c. (8 oz.) spinach or other noodles
3 tbsp. butter
1 c. grated Parmesan
1 c. diced Swiss cheese
1 c. Mozzarella cheese, diced

THIN WHITE SAUCE:

3 tbsp. butter
3 tbsp. flour
1 1/4 tsp. salt
1/4 tsp. pepper
1/8 tsp. nutmeg
2 1/2 c. milk

Coat a buttered 3 quart casserole or 13"x9" pan with the bread crumbs. Cook noodles about 5 minutes. Drain, toss with butter, Parmesan cheese. Add other two cheeses, toss lightly.

In the meantime, you will have made the white sauce, melting the butter in a saucepan and slowly adding the flour and seasonings to a smooth paste. Stir constantly while adding milk, watching heat. Continue stirring until sauce boils one minute. Place one half noodles in dish. Add half the white sauce. Repeat. May top with Parmesan. Rich. Bake at 350 degrees for 25 minutes. Grandchildren love it!
