PIPPARKAKUT - SPICE COOKIE 
2/3 c. butter
3/4 c. brown sugar
1 tbsp. cinnamon
2 tsp. ginger
1 1/2 tsp. ground cloves
1 1/2 tsp. baking soda
2 1/2 c. flour
1/4 to 1/3 c. water

Blend all ingredients adding enough water to make a pliable dough. Cut out shapes with cookie cutters. Bake at 375°F for 7 to 10 minutes.

These also make a great Christmas tree ornament. Poke a hole in cut out shapes before baking. Hang them on the tree using ribbon.

If you are looking for the best tasting, durable gingerbread cookie, this is it! It is crisp and tasty, with no strong molasses flavor. Kids love them, grown ups too! I have used it for decades. I make huge gingerbread men to hang on the tree. Use Royal icing to decorate. Remember to poke hole for hanging before you bake. You may have to widen the holes a little after you take them out of the oven.
