SUNSHINE FRUIT PARFAIT 
2 tbsp. frozen orange juice concentrate (fresh orange juice works just as well)
1 banana, sliced
1/2 cup canned or fresh pineapple chunks or crushed
1 tbsp. sugar
1 cup cool whip partially thawed
1 orange peeled, sectioned and cut up
1/4 cup flaked coconut

In small bowl combine orange juice and sugar, mix well. Fold in cool whip and lightly beat. In another small bowl combine orange pieces, bananas, and pineapple. In parfait glasses alternately layer fruit, coconut and cool whip. Chill.

Serves 2 (may be doubled).
