HOT BROWN SANDWICHES 
SANDWICHES:

2 slices turkey
2 slices bread, toasted
Bacon, fried crisp
Paprika or parsley for garnish

CHEESE SAUCE:

1/2 c. butter
2 heaping tbsp. flour
Pinch of salt
1 1/2 c. milk
1 c. grated Cheddar cheese

Melt butter in pan with 3/4 cup capacity. Blend in flour and salt. Slowly add milk. Allow to heat, but do not boil. Add cheese. Cook until thick. If too thick, add more milk.

To make sandwich, start with a slice of toast. Top with a slice of turkey. Pour on small amount of sauce. Add second slice of toast, turkey and more sauce. Top with bacon and paprika or parsley.
