MOCHA POUND CAKE 
2/3 c. shortening
2 c. sifted cake flour
1 1/4 c. sugar
1 tbsp. instant coffee
1 tsp. salt
1/2 tsp. cream of tartar
1/4 tsp. baking soda
1/2 c. water
1 tsp. vanilla
3 eggs
2 sq. unsweetened chocolate

Stir shortening to soften. Sift in flour, sugar, coffee, salt, cream of tartar and soda. Add 1/2 water and vanilla. Mix until flour is dampened. Then beat vigorously 2 minutes. Add eggs and chocolate (melted). Beat 1 minute longer. Pour in paper lined 9 1/2 x 5 x 3 inch loaf pan. Bake in slow oven (325 degrees) about 65 minutes or until done. Cool in pan 10 minutes. Remove. When thoroughly cool, sift confectioners' sugar on top.
