CHEESE CHOWDER 
4 potatoes, peeled and chopped
5 carrots, peeled and chopped
1 onion, peeled and chopped
2 c. chicken broth
4 tbsp. butter
3 tbsp. flour
2 c. milk
2 c. grated Cheddar cheese

Combine first 4 ingredients. Simmer, partially covered, 15 minutes. As vegetables cook melt butter in saucepan. Add flour and blend. Slowly add milk, stirring with whisk until smooth. Stir in cheese. Cook over low heat until melted. Slowly add to vegetable/stock, stirring until blended.
