NEW POTATOES IN CHEESE | |
10-12 sm. red potatoes, scrubbed 1 sm. onion, chopped 3 tbsp. butter 2 tbsp. flour 1 c. milk 4 oz. grated cheddar cheese 1/4 tsp. dry mustard Boil scrubbed potatoes gently until done. Set aside. In a saucepan, melt butter and add flour. Mix well. Add milk and cheese. Cook until thickened. Add dry mustard and chopped onion. When cheese is melted, pour over potatoes and simmer until potatoes are heated through. Onions should be al dente. |
