PECAN BRITTLE 
1 c. corn syrup
1 c. sugar
1/2 c. water
2 c. pecans
1/4 c. butter
1/2 tsp. salt
2 tsp. baking soda

Combine corn syrup, sugar and water in heavy saucepan. Cook over low heat until sugar is completely dissolved, stirring constantly. Cook, covered, over medium heat for 2 to 3 minutes, or until steam washes sugar crystals from side of pan. Cook, uncovered, to 300 degrees on candy thermometer; do not stir. Add pecans. Remove from heat. Stir in butter and salt. Stir in soda. Pour quickly into buttered 10"x15" pan. Cool slightly. Cut into small pieces with scissors. Store in loosely covered container. Yield: 2 1/2 pounds.
