PECAN BRITTLE 
1 c. sugar
1/2 c. corn syrup (light)
1/4 c. water
1/4 tsp. salt (optional)
1 c. nuts, broken
1 tbsp. butter
1 tsp. baking soda
1/3 c. candied fruit (optional)

Combine first four ingredients in heavy saucepan, mix well. Cook over medium heat, stirring constantly until mixture boils. Add pecans, return to a boil, stirring constantly. You must cook to hard crack stage (300 degrees). Remove from heat, stir in butter and baking soda. Spread out on a buttered cookie sheet (approximately 15 x 10 x 1 inch). Sprinkle with candied fruit and gently press fruit in mixture with the back of a spoon. Cool, break into pieces and eat! Makes approximately 1 pound.
