SWEET AND SUGAR FREE 
3/4 c. mashed banana
1/3 c. vegetable oil
2 large eggs
1/2 c. water
2 c. unbleached white flour
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. chopped walnuts or pecans

Beat together mashed banana, oil, eggs and water until creamy. Add flour, baking soda, baking powder and spices. Beat well. Stir in chopped nuts. Spoon batter into an oiled and floured 9 x 5 inch loaf pan. Spread batter evenly in pan. Bake at 325 degrees for 45 minutes or until an inserted knife comes out clean. Cool completely on wire rack before slicing. (If you would like it to be sweeter, use sub concentrate apple juice in place of water).
