WHEAT-FREE MINESTRONE 
1-2 tbsp. oil (olive, canola or corn)
1/2 c. corn pasta (dry) or rice
2/3 c. cooked kidney beans
6 oz. no-salt-added V-8 juice
3 c. water
1 clove garlic, chopped
1/4 onion, chopped
1 c. chopped vegetables (cabbage, potatoes, celery, carrots, peas)
Various spices to taste

Stir fry onion and garlic in oil. Add to all other ingredients in a large pot. Cook on low until tender (about an hour). Add water if needed. Serves 2. Double for 4. Can also be made in a crock pot and left all day or all night.
