PERSIMMON PUDDING 
1 c. persimmon pulp
1 c. sugar (part brown)
1 c. flour
2 eggs
1 c. milk
2 tbsp. melted butter
1/2 tsp. cinnamon
2 tsp. baking powder

Beat together persimmon pulp and sugars until smooth. Beat in eggs and milk. Mix in sifted dry ingredients. Melt the butter in the pan you use for baking, then pour into the batter and mix well. Bake at 300 degrees for 1 hour. If using a 13 x 9 x 2 pan you need to double the recipe.
