PERSIMMON PUDDING 
1 c. persimmon pulp
1 c. sugar
1/2 c. milk
2 eggs
1/2 tsp. salt
2 tsp. baking soda
1/2 tsp. cinnamon
1 tsp. vanilla
1 tbsp. oil
1/2 c. chopped nuts

Mix soda with persimmon pulp and let sit while mixing other ingredients. Add persimmon pulp, mixing well. Pour in loaf pan sprayed with Pam and bake in 300 degree oven for 1 hour.
