LEMONY BARS | |
BASE: 1 c. sifted all-purpose flour 3/4 c. sugar 1/2 tsp. baking powder 1/4 tsp. salt 2 c. Rice Chex cereal crushed to 1/2 c. 1/2 c. butter TOPPING: 2 eggs, beaten 3/4 c. sugar 2 tbsp. all-purpose flour 1/4 tsp. baking powder 4 tsp. lemon juice 1 tsp. grated lemon peel Preheat oven to 350 degrees. Grease 9-inch square baking pan. To prepare base, sift together flour, sugar, baking powder and salt. Stir in Rice Chex crumbs. Cut in butter until very fine crumbs. Press mixture firmly into pan. Bake 12 minutes. Meanwhile, prepare topping. Combine all ingredients. Mix until well blended. Pour over hot base. Return to oven for additional 15-20 minutes or until top is set but not browned. Cool. Sprinkle with confectioners sugar. Cut into bars. Makes 24 (2 1/4 x 1 1/2 inch) bars. |
