CHERRY LOIN ROAST 
4 - 5 lb. pork loin roast (loin end)
1 tsp. salt
1/2 tsp. ground cloves
1/4 tsp. pepper
1/2 cup cherry preserves

Place roast fat side up on rack in shallow pan. Insert meat thermometer in center of roast. Roast uncovered in preheated 325°F oven allowing 30 - 35 minutes per pound. Thermometer should register 170°F.

Thirty minutes before roast is done, sprinkle with mixture of salt, cloves and pepper. Spread cherry preserves over top.

Continue roasting uncovered until done.
