ROMAN CHICKEN 
1 chicken, cut up
Flour
1/3 c. butter
1/2 c. chopped onion
3/4 c. diced celery
1 clove garlic, minced
1 lg. can tomatoes
1/4 c. water
1 1/2 tbsp. parsley
Salt and pepper to taste
1/2 tsp. oregano
1/2 tsp. basil

Coat chicken pieces in flour. Brown in melted butter. Remove chicken from pan and add garlic, onion and celery. Saute until tender but not brown.
