OKRA-TOMATO-RICE PARMESAN | |
10 to 15 small to medium okra (washed and sliced about 1/4-inch thick) 1/4 cup instant rice (Minute) 1 (15 oz.) can diced tomatoes with basil, garlic and oregano (Hunts) Parmesan cheese, for sprinkling salt and pepper, to taste Preheat oven to 350°F. Layer sliced okra in bottom of pie plate. Sprinkle 1/2 the rice. Spoon 1/2 the can of tomatoes. Sprinkle some Parmesan cheese. Season with salt and pepper. Repeat rice, tomatoes with juice and Parmesan cheese. Cover with foil and bake at 350°F for 15 minutes. Remove foil and bake until rice is done. Submitted by: Susan Bailey |
