SAUSAGE, RICE AND TOMATO
CASSEROLE
 
My kids like it without the tomatoes, so I do a separate one for them.

1 lb. bulk mild sausage, cooked and drained
1 medium onion, chopped
1 bag boil in bag rice (your choice)
1 medium tomato, sliced
6 slices American cheese (I use Kraft)

Brown sausage in skillet and add chopped onions. Cook and drain grease. Meanwhile, prepare rice according to package directions (about 10 minutes).

Mix sausage and rice together and stir. Place in a casserole dish and layer top with sliced tomatoes. Cover top with 6 slices of cheese.

Bake at 350°F for 10 minutes or until cheese is melted.
