FRUITCAKE 
1 c. diced zucchini
1 tsp. brandy flavoring
1 c. sugar
1 c. apple juice
1/3 c. butter
2 tbsp. water
1/2 c. chopped dates
2 c. unsifted flour
1 tsp. salt
7/8 tsp. baking powder
3/4 tsp. baking soda
1/2 c. mixed candied fruits
1/2 c. chopped nuts

Sprinkle diced zucchini with brandy flavoring; set aside. Combine sugar, apple juice, butter, water and dates; bring to a boil. Boil 2 minutes; cool. Mix dry ingredients and stir into apple juice mixture. Add zucchini, candied fruit and nuts; mix well. Spoon into 2 greased and paper-lined 9 x 5 x 3 inch loaf pans. Bake at 325 degrees for 1 hour or until it tests done. Cool and chill before cutting. A double recipe makes one 9 x 5 inch and two 8 x 4 inch pans.
