PINEAPPLE CAKE | |
2 beaten eggs 1 tsp. vanilla 2 c. flour 2 c. sugar 2 tsp. baking soda 1/2 tsp. salt 20 oz. can crushed pineapple with juice 1/2 c. chopped pecans Mix eggs, vanilla, flour, sugar, baking soda and salt. Add crushed pineapple and chopped pecans. Bake at 350°F from 30 to 35 minutes in a greased and floured 9 x 13 pan or two 9-inch round pans. Frosting: 1 stick softened butter 8 oz. cream cheese 1 3/4 c. confectioners sugar 1 tsp. vanilla Blend together. Frost warm cake. Sprinkle with more pecans. This cake is very dense, moist and rich...but it is very easy to make. |
