VERSATILE MUFFINS | |
1/4 c. shortening 1/2 c. sugar 1 (16 oz.) can applesauce 1 tsp. baking soda 2 c. whole wheat (or white) flour and oatmeal 1/2 c. bran 1 (16 oz.) can fruit (sm. chunks) (pears, blueberries and cranberry sauce are great) Cream sugar and shortening in a mixing bowl. Heat applesauce in glass container for 2 minutes until boiling. Stir baking soda into applesauce. It will bubble and fizz. Mix applesauce into shortening/sugar until shortening is almost melted. Stir in flour, oatmeal and bran. Add chunked fruit and stir just until fruit is well distributed in the mix. Spoon into cupcake papers in muffin pan until 3/4 full. Makes 12 medium muffins. |
