OATMEAL CARROT MUFFINS 
3/4 c. brown sugar
1/2 c. oil
1 egg
1 tsp. vanilla
1/2 c. grated carrot
1 c. rolled oats
1/2 c. whole wheat flour
1/2 c. all-purpose flour
1 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 1/4 tsp. cinnamon
1/4 tsp. nutmeg
Chopped nuts

Combine oil, brown sugar, egg, vanilla and carrots. Mix well. Combine dry ingredients and stir into first mixture. Add nuts. Spoon into 12 muffin papers. Bake at 400 degrees for 15-18 minutes.

NOTE: I also added about 1/4 cup drained crushed pineapple and flour that it made an even better muffin.
