BROWN SUGAR - OATMEAL MUFFINS | |
1 c. old fashioned oats 1/2 c. whole wheat flour 1/2 c. all-purpose flour 2 tsp. baking powder 1/2 tsp. salt 2 eggs 3/4 c. brown sugar 3/4 c. milk 1/4 c. oil or melted butter 1 tsp. vanilla Mix oats, flours, baking powder and salt in a large bowl. Whisk eggs and brown sugar in a small bowl until smooth. Whisk in milk, melted butter and vanilla. Pour over dry ingredients; mix and pour batter into muffin cups. Bake in preheated 400 degree oven 15-20 minutes. Remove to rack to cool. Makes 12 muffins. Per muffin: 86 cal., 2 g pro., 13 g car., 3 g fat, 22 mg chol., with oil, 105 mg sod. Great for snacks. |
