BROWN SUGAR OATMEAL MUFFINS 
1 c. oats
1/2 c. whole wheat flour
1/2 c. all purpose flour
2 tsp. baking powder
1/2 tsp. salt
2 lg. eggs
3/4 c. packed dark brown sugar
3/4 c. milk
1/4 c. melted butter or 1/4 c. oil
1 tsp. vanilla

Mix oats, flours, baking powder and salt in large bowl. Whisk eggs and brown sugar in small bowl. Whisk in milk, melted butter and vanilla. Pour over dry ingredients.

Fold with spatula until moistened. Scoop batter into 24 greased muffin cups. Bake 400 degrees for 15 to 20 minutes.
