BROWN SUGAR OATMEAL MUFFINS 
1 cup oats
1/2 cup whole wheat flour
1/2 cup all-purpose flour
2 tsp. baking powder
1 tsp. salt
2 large eggs
3/4 cup brown sugar, packed
3/4 cup milk
1/2 cup vegetable oil
1 tsp. vanilla

Preheat oven to 400°F. Mix together in large bowl the oats, flour, baking powder and salt. Whisk together in a small bowl the eggs and brown sugar. Add the egg mixture, milk, oil and vanilla. Pour liquid mixture over dry ingredients; stir well. Batter will be soupy.

Bake at 400°F for 15 to 20 minutes.

Makes 16 to 18 muffins.
