PUFFERS (PURIS) | |
1 c. whole wheat flour 1 c. all-purpose flour 1 tsp. salt 2 tbsp. ghee (butter left after skimming off fizz from boiling butter) About 3/4 c. hot water Put dry ingredients into deep bowl, and add ghee. Mix well with fingers until crumbly. Start adding water (pour with one hand, crumble with other). Stop adding water when dough forms smooth ball. Knead roughly. Smear with ghee and set aside for rolling out. Sprinkle flour on rolling pin and rolling surface. Pinch off walnut size pieces of dough. Roll out very thin. Drop into hot peanut oil. Hold under oil with spoon for awhile and watch them puff up! Remove from oil when slightly brown and drain on paper towels. Serve with plain yogurt, chicken curry, and potato curry. Kids love to make these, (supervision needed) and eat them. |
