SPANISH RICE 
1 c. brown rice
2 med. onions, diced
2 tbsp. safflower oil
3 tomatoes, chopped
2 tbsp. vinegar
1/2 c. tomato juice
1/2 tsp. black pepper
2 tsp. onion powder
1/8 tsp. garlic powder
1/2 tsp. dry, ground horseradish

Saute onion, green pepper and rice in oil until rice is dark brown. Add all other ingredients. Simmer 5 minutes. Put in casserole. Bake at 350 degrees for 30 minutes.
