CRANBERRY CAKE 
2 1/4 c. flour
1 c. sugar
1/4 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 c. nuts, chopped
1 c. raisins
1 c. whole raw cranberries
2 orange rinds (blended)
3 eggs, beaten
3/4 c. salad oil
1 c. buttermilk

Sift together dry ingredients. Stir in nuts, raisins, cranberries and orange rinds. Combine eggs, salad oil, buttermilk. Add to dry ingredients. Bake at 350 degrees for 45 minutes. Watch time. Apply topping while cake is warm.

TOPPING:

1/2 c. orange juice
1/2 c. granulated sugar

Heat until sugar is dissolved. Pour over warm cake. Toothpick holes until it goes down.
