SCANDINAVIAN DESSERT CAKE | |
1 c. sugar 1/2 c. shortening 2 eggs, beaten 2 1/4 c. flour 1/4 tsp. salt 1 tsp. baking powder 1 tsp. baking soda 1 c. buttermilk 1 c. chopped walnuts 1 c. dates, chopped 1 c. whole cranberries Grated rind of 2 oranges Cream butter and sugar, blend in beaten eggs. Sift flour and measure, sift with other dry ingredients. Add dry ingredients to creamed mixture alternately with buttermilk. Add nuts, dates, cranberries and orange rind. Bake at 350 degrees for 55 to 60 minutes. I spray a 13x9 inch pan with Pam. TOPPING: 1 c. sugar 1 c. orange juice Pour over cake while it is still warm. Let set for 24 hours. |
