SCANDINAVIAN DESSERT CAKE 
1 c. sugar
1/2 c. shortening
2 eggs, beaten
2 1/4 c. flour
1/4 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 c. buttermilk
1 c. chopped walnuts
1 c. dates, chopped
1 c. whole cranberries
Grated rind of 2 oranges

Cream butter and sugar, blend in beaten eggs. Sift flour and measure, sift with other dry ingredients. Add dry ingredients to creamed mixture alternately with buttermilk. Add nuts, dates, cranberries and orange rind. Bake at 350 degrees for 55 to 60 minutes. I spray a 13x9 inch pan with Pam.

TOPPING:

1 c. sugar
1 c. orange juice

Pour over cake while it is still warm. Let set for 24 hours.

When it says to let set for 24 hrs. you really need to do that. Unfortunately, I had only let mine set for 12 hours to me it was a little on the sweet side and kind of crumbled (I think it would resemble more of a fruit cake if left to sit for the alloted time). However the people for whom this was made loved it. So it's indeed something each person must decide on. As for preparation, pretty easy.....
