COCONUT MACAROON PIE 
3 eggs, beaten
1 1/2 c. sugar
1/2 c. butter, melted
4 tsp. lemon juice
1 tsp. vanilla
1 1/3 c. flaked coconut
1 unbaked pie crust (can use frozen)

Combine eggs, sugar, butter, lemon juice and vanilla. Mix well. Stir in coconut. Pour into pie shell. Bake at 350 degrees for 40 minutes, or until knife inserted comes out clean.
