COCONUT PIE 
1 c. sugar
2 eggs
2 tbsp. flour
2 c. milk
1/2 tsp. lemon extract or 1 tsp. vanilla extract
1 (9") pie shell
1 can coconut or 1 c. coconut

Preheat oven at 375 degrees. Mix sugar and flour. Stir in beaten eggs. Add milk and extract; stir well. Add coconut, stripping well. Line bottom of pie shell with a small amount of coconut. Pour in mixture. Bake at 375 degrees for 40-45 minutes.
