CANDIED ORANGE PEEL 
4 large oranges
sugar

Carefully cut orange peel into 4 parts.

Using a kitchen shears, cut each quarter into 1/4 inch pieces. Gently scrape some zest away. (Scraping all away will make orange peels less easy to process.)

In small saucepan, bring water to boil. Boil all orange peels about 2 minutes, drain and rinse. Repeat process 3 more times. Again, in saucepan, cook 1/2 cup sugar in 1/2 cup water until it dissolves. Place orange peels in sugar water and cook until light can show through or translucent.

All water will have boiled away. Place on waxed paper on rack to dry.

If desired, sprinkle with more sugar. May be kept in airtight container.
