VEGETABLE AND CHEESE CHOWDER | |
1/3 c. Quaker oats 2 tbsp. butter 1 c. sliced celery 1/2 c. chopped onion 2 c. milk 2 c. water 1 (16 oz.) pkg. frozen mixed vegetables 1 tsp. prepared mustard 1/8 tsp. pepper 2 c. shredded cheese Place oats in blender or food processor bowl. Cover. Blend or process for one minute, stopping to stir; set aside. In 4 quart saucepan or Dutch oven saute celery and onion in butter; blend in ground oats. Gradually add milk and water. Continue cooking over medium heat, stirring constantly, until thickened. Reduce heat, add remaining ingredients, except cheese. Continue cooking over low heat for 10 minutes or until heated through. Remove from heat; add cheese, mixing until blended. About 6 servings. |
