SPICE POTATO CAKE 
1 3/4 c. sugar
1 c. cold mashed potatoes
3/4 c. shortening
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
3 eggs, beaten
1 tsp. baking soda
1 c. buttermilk
2 c. + 2 tbsp. flour
3/4 c. chopped nuts

CARAMEL ICING:

1/2 c. butter
1 c. brown sugar
1/4 c. evaporated milk
2 c. confectioners' sugar

Combine sugar, potatoes, shortening, cinnamon, salt and nutmeg. Cream 4 minutes. Beat in eggs; blend well. Combine soda and buttermilk. Add alternately with 2 cups of flour to mixture. Coat nuts with remaining 2 tablespoons flour. Stir into batter. Bake in greased and floured 9"x13" pan at 350 degrees for 45 to 50 minutes. Top with icing.

ICING: Melt butter in saucepan. Add brown sugar and boil 2 minutes, stirring constantly. Stir in milk and bring to boil. Cool to lukewarm. Gradually beat in confectioners' sugar until thick enough to spread.
