POTATO SPICE CAKE | |
1 1/2 c. sugar 1 c. cold mashed potatoes (see Note) 3/4 c. butter, softened 1 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. nutmeg 3 eggs 1 tsp. baking soda 1 c. buttermilk 2 c. all purpose flour 1/2 c. raisins 1/4 c. chopped walnuts (opt.) Quick Caramel Frosting Cream together first 6 ingredients. Add eggs and beat well. Mix soda with the buttermilk and add alternately with flour to first mixture, beating after each addition until smooth. Fold in raisins and nuts, if desired. Spread in greased 13"x9"x2" pan and bake in preheated 350 degree oven 40 minutes, or until done. Let stand in pan on rack until cold, then frost. NOTE: Instant mashed potatoes can be used; omit salt. QUICK CARAMEL FROSTING: Melt 1/4 cup butter in saucepan. Stir in 3/4 cup packed brown sugar and cook, stirring 2 minutes. Slowly add 3 tablespoons milk and bring to boil. Remove from heat and stir in 2 cups confectioners' sugar and 1 teaspoon vanilla. |
