CRUNCHY ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 c. oil 2 c. grated zucchini 1 tsp. vanilla 3 c. flour 3 tsp. cinnamon 1 tsp. salt 1 tsp. baking soda 1 tsp. baking powder 1/2 c. nuts Beat eggs until frothy. Stir in sugar, oil, zucchini and vanilla. Add other ingredients and mix well. Pour batter into two well-greased loaf pans. Bake 1 hour at 325 degrees. Cool 10 minutes in pan before turning out on racks. |
