ZUCCHINI BREAD OR CAKE 
3 eggs
1 c. oil
2 c. sugar
1 tbsp. vanilla
2 c. grated raw zucchini
3 c. flour
1 tbsp. cinnamon
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 c. walnuts

Beat eggs until foamy, add sugar, oil, vanilla and zucchini. Mix well but lightly. Mix dry ingredients and add to zucchini mixture. Stir in nuts. Bake in greased loaf pans or 9"x13" cake pan for 1 hour at 325 degrees. Can sprinkle granulated sugar on top before baking.
