PEANUT BUTTER ZUCCHINI CAKE 
1/2 c. chunky peanut butter
1/4 c. oil
3 eggs
1 1/2 c. brown sugar
1 (8 1/2 oz.) can crushed pineapple, undrained
2 c. zucchini, peeled, shredded
1/2 c. raisins
2 c. flour
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt

Thoroughly mix peanut butter, oil, eggs, sugar. Stir in pineapple, zucchini and raisins. Blend in dry ingredients. Place in greased and floured 9 x 13 inch pan. Bake at 350 degrees for 45 to 55 minutes. Serve with whipped cream and garnish with chopped peanuts.
