ZUCCHINI CORN BREAD BAKE 
2 med. zucchini
1/2 lb. Italian or pork sausage
1/4 c. onion, chopped
1 (8 oz.) pkg. corn muffin mix
1/2 c. Cheddar cheese, shredded

Shred enough zucchini to make 1/3 cup. Set aside. Cut remaining into 1/4 inch slices. Brown sausage. Remove. Add zucchini slices and onion, stirring to coat. (Approximately 5 minutes.) In an 8 x 1 1/2 inch greased baking dish, arrange slices. Prepare muffin mix. Stir in shredded zucchini, cooked sausage and shredded cheese. Bake at 350 degrees for 25 to 30 minutes.
