SPANISH RICE 
1 lb. hamburger
1 sm. onion, chopped
1/4 c. green pepper, chopped
3 tbsp. butter
2 c. canned tomatoes
2 tbsp. sugar
3 c. hot, cooked rice (1 cup uncooked = 3 cups cooked)
Salt and pepper to taste

Saute onion and pepper in the butter; set aside. Cook hamburger in same skillet until all red has left meat and meat is done, but not brown. Add onion, pepper, tomatoes, sugar, and rice to meat; season to taste. Bring to a boil; turn down to very low heat. Gently simmer for 5 minutes longer. Sprinkle grated cheese over top (If desired).
