REUBEN CASSEROLE 
1/2 c. sour cream
1 onion, chopped
20 oz. can sauerkraut
12 oz. Swiss cheese
12 slices rye bread
1/2 c. Thousand Island dressing
2 (12 oz.) cans corned beef
1 stick butter

Mix together and spread in a 9 x 13 inch pan; sour cream, Thousand Island dressing, onion and sauerkraut. Cover with crumbled corned beef and the Swiss cheese. Top with cubed rye bread and butter. Bake in a 350 degree oven for 30-40 minutes until bubbly. If made ahead of time, all ingredients can be put together except for bread cubes and butter and refrigerated. Great for parties! Can easily be halved or doubled depending on the size of the group. Recipe given to me by Debbie Blackstone of Lexington, Ohio.
