REUBEN CASSEROLE 
1 box croutons
1/2 c. onions, finely chopped
1 c. sour cream
1 lb. corned beef
12 oz. sauerkraut, well drained
8 oz. mozzarella cheese, grated
1/4 lb. butter or one stick

Grease a 2 1/2 quart baking dish. Then begin to layer the ingredients by first placing 1/2 of the bread crumbs (croutons) in the dish. Next, chop and combine onions and sour cream. Then spread the onion and sour cream mixture over the croutons. Then chop and add the 1 pound of corned beef. Add sauerkraut on top of the corned beef. Next, sprinkle the mozzarella cheese over the sauerkraut. Then add layer of croutons and pour 1/4 cup melted butter over croutons. Bake for 1/2 hour in 350 degree oven.
