SWEET POTATO CASSEROLE 
1 qt. sweet potatoes, cooked and mashed
1/2 c. sugar
3 tbsp. butter
2 whole eggs, beaten
1 tsp. orange flavor
1/8 tsp. salt

Mash cooked sweet potatoes (drain liquid before mashing potatoes). Add butter, sugar, beaten eggs, flavor, salt; mix well together. Place into lightly greased casserole dish. Sprinkle 1/2 cup brown sugar on top, then top with marshmallows. Crush cornflakes (cup). Melt 4 tablespoons butter; mix well with cornflakes. Top over marshmallows. Bake at 350 degrees for 35 minutes.
