COUNTRY CLUB CASSEROLE 
2 1/2 c. cooked chicken, cut in large pieces
1/3 c. sliced pimentos
1/4 tsp. pepper
1 tbsp. chopped parsley
2 c. hot cooked rice
1/2 c. chopped onions
1/2 c. green peppers
1 can Cream of Mushroom soup
1 c. grated Cheddar cheese
1 tsp. garlic salt

Combine all ingredients except cheese. Toss lightly, turn into a greased shallow 2 quart casserole. Sprinkle with cheese. Bake at 350 degrees for 25 minutes. Makes 6 servings.
