FRIED MEXICAN POTATOES 
4 medium potatoes, peeled and cubed
1 tbsp. olive oil
1 onion, chopped
1 garlic clove, chopped
2 tsp. chili pepper
2 tsp. oregano
dash Kosher salt
black pepper, to taste
Parmesan cheese, for sprinkling
dairy sour cream, for garnish

Cover and boil potatoes for 10 minutes. Drain potatoes and save in a bowl.

Add oil to a skillet. Fry onions for 8 minutes.

Add garlic. Fry an additional 2 minutes or more.

Add chili powder, oregano and salt. Add potatoes into spice mix, stir to cover potatoes.

Cook at a low simmer 10 minutes or until potatoes are tender.

Transfer potatoes to bowl. Sprinkle with Parmesan cheese. Serve topped with dairy sour cream.
